No problem at all doing that! No moving parts or liquids. What you may want to make sure of is, that the heating elements are either removed or made to move as little as possible during transport. You can use foam or some other material to protect the contact point of the element and the stove.

Your variables ("room for all of my stuff", you and 2 friends, and "good miles per gallon") are really too wide ranged for anyone to give you a sensible answer. What seems like great gas mileage to some may suck to others, and the height and weight of your friends and you will make a huge difference in the vehicle you choose, and what ever amounts to "all my stuff" can require anything from a Honda Civic to a GMC Denali or Ford Excursion. As well, what you're used to in terms of space and gas mileage is a huge variable that needs to be considered. You do have a good distance to drive, so, I can understand your want to "cover all bases", but you have to be more specific on your variables. God Bless you.

Seriously!? Your friend needs to think about what they're saying. A truck and a SUV are 2 very different things. I drive a 2004 chevy tahoe. That is an SUV. and my step mom drives a 2006 Chevy Avalanche. That is a truck. Second! Trucks and SUVs are 99% of the time going to be MUCH MUCH MUCH slower unless you but an SUV like the Porsche Cayenne. My dad drives a 2006 Mercedes benz C230. 100% Of the time, my dad's benz blows my SUV and My step mom's truck away. My step mom even modified her engine! And also, its the driver not the car. My step loves to get on the freeway and race people. Even in her truck she beats little sedans because they end up behind a car going 20 mph. Honestly its mostly about the way you drive.

Your friend is an idiot. The SUV is always at a disadvantage because it is heavier. always.
The mustang GT is about 32k, I don't think you can buy any SUV from any company anywhere near that price that could compete with the mustang in any way. You'd have to spend 4 times as much and get a Cayenne Turbo from Porsche.
You don't even have to get a Mustang. Your average 6cyl family sedan has 260HP these days. That's enough to get it to 60mph in about 6 seconds. There are only a handful of full size SUV's that can do that and they all cost over 40 grand.

Rent a U-Haul, trying to tie something that size to the top of a vehicle isn't safe.

Get a Pick-up or a Cargo Van or even a small utility trailer.
